12 oz fettuccine or spaghetti

6 cloves garlic, thinly sliced

1/2 cup extra virgin olive oil

1/4 teaspoon red pepper flakes

1 cup breadcrumbs (preferably homemade)

1/2 cup grated Parmesan cheese (optional for taste)

1/4 cup fresh parsley, finely chopped

Salt and pepper to taste

Lemon zest from 1 lemon

1 tablespoon lemon juice

Instructions
 

Cook Pasta: Bring a large pot of salted water to a boil. Add the fettuccine or spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Prepare Garlic Oil: In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and red pepper flakes. Sauté for about 3-4 minutes, or until the garlic is golden brown and fragrant (be careful not to burn it).

      Make Herb Crunch: In a separate pan, toast the breadcrumbs over medium heat with a drizzle of olive oil, stirring frequently until golden brown and crunchy, about 5-7 minutes. Season with a pinch of salt and pepper.

        Combine Pasta and Sauce: Add the drained pasta to the skillet with the garlic oil. Toss to coat, adding reserved pasta water as needed to create a silky sauce. Stir in lemon juice and zest for freshness, seasoning with salt and pepper to taste.

          Add Crunch and Cheese: Gently fold in the toasted breadcrumbs and grated Parmesan cheese (if using) until well combined. Finally, stir in the chopped parsley for a vibrant touch.

            Serve: Plate the garlic pasta and garnish with extra parsley and a sprinkle of lemon zest for an added pop of color and flavor.
