Ingredients

4 medium-sized potatoes, peeled and grated

1 small onion, finely grated

1 large egg

1/4 cup all-purpose flour

1 teaspoon baking powder

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon garlic powder

1/4 cup vegetable oil (for frying)

Optional toppings: sour cream, applesauce, or chives for garnish

Instructions

Start by placing the grated potatoes into a clean kitchen towel and squeezing out as much liquid as possible. This will help the pancakes become crispy.

In a mixing bowl, combine the grated potatoes, grated onion, and egg. Mix well.

Add in the flour, baking powder, salt, pepper, and garlic powder. Stir until combined, ensuring that everything is evenly mixed.

Heat a large skillet over medium heat and add the vegetable oil, allowing it to get hot.

Using a tablespoon, drop spoonfuls of the potato mixture into the skillet, flattening them gently to form pancakes. Cook in batches, being careful not to overcrowd the skillet.

Fry the pancakes for about 3-4 minutes on each side or until they are golden brown and crispy. Adjust the heat as necessary to avoid burning.

Once cooked, transfer the pancakes to a paper towel-lined plate to drain excess oil.

Repeat the process with the remaining potato mixture, adding more oil to the skillet if needed.

Serve the crispy potato pancakes warm, with optional toppings of sour cream, applesauce, or fresh chives.
