4 large Yukon Gold potatoes, peeled and diced

1 large onion, finely chopped

2 cloves garlic, minced

3 cups vegetable broth

1 cup heavy cream

2 medium carrots, diced

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

1 tablespoon olive oil

1/2 cup crispy bacon bits (or vegan bacon), for topping

Fresh chives, finely chopped for garnish

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

    Stir in the minced garlic and cook for another 1-2 minutes until fragrant.

      Add the diced potatoes and carrots to the pot, mixing well with the onion and garlic.

        Pour in the vegetable broth, then add the thyme, smoked paprika, salt, and pepper. Bring the mixture to a boil, then reduce the heat to a simmer.

          Cover the pot and let it simmer until the potatoes and carrots are tender, about 15-20 minutes.

            Once the vegetables are soft, use an immersion blender to puree the soup until smooth. If you prefer a chunkier texture, blend only half of the mixture.

              Return the soup to low heat and stir in the heavy cream. Adjust seasoning if necessary, then allow it to warm for another 5 minutes.

                Serve hot, garnished with crispy bacon bits and fresh chives on top.
