Ingredients

24 Golden Oreo cookies, crushed

6 tablespoons unsalted butter, melted

16 oz cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

2 large eggs

1 cup fresh strawberries, hulled and chopped

1/2 cup sour cream

1 tablespoon cornstarch

1/4 teaspoon salt

Additional strawberries for garnish

Instructions

Prepare the Crust: Preheat your oven to 325°F (160°C). In a medium bowl, combine the crushed Golden Oreo cookies and melted butter. Mix well until the crumbs are evenly coated. Press the mixture firmly into the bottom of a greased 9x9-inch baking pan to form a crust. Bake for 10 minutes, then remove and let it cool slightly.

Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy. Add in the granulated sugar and continue mixing until well combined. Scrape the sides of the bowl as needed.

Add Flavor and Creaminess: Mix in the vanilla extract, followed by the eggs one at a time, ensuring each is fully incorporated before adding the next. This helps prevent overmixing. Add the sour cream, cornstarch, and salt, and mix until just combined.

Incorporate Strawberries: Gently fold in the chopped fresh strawberries into the cheesecake mixture. This will distribute the fruit throughout the filling and create a delightful flavor.

Combine and Bake: Pour the cheesecake mixture over the cooled Oreo crust, spreading it evenly. Tap the pan on the counter to eliminate air bubbles. Bake in the preheated oven for 35-40 minutes or until the center is set and the edges are lightly golden.

Cool and Refrigerate: Remove the cheesecake bars from the oven and let them cool at room temperature for about 1 hour. Once cooled, cover the pan with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.

Cut and Serve: Carefully lift the cheesecake out of the pan using the edges of the parchment paper (if used) and slice into bars. Garnish each bar with additional fresh strawberries for a pop of color and flavor.
