4 slices of sourdough bread

2 cups yellow onions, thinly sliced

2 tablespoons butter

1 tablespoon olive oil

1 teaspoon sugar

1 teaspoon thyme leaves (fresh or dried)

1 cup gruyère cheese, grated

1 cup sharp cheddar cheese, grated

Salt and pepper to taste

Optional: 1 tablespoon balsamic vinegar

Optional: Fresh parsley for garnish

In a skillet over medium heat, melt the butter and olive oil together. Add the sliced onions, season with a pinch of salt, and stir to coat.

    Cook the onions, stirring occasionally, for about 10-15 minutes until they soften. Add the sugar and thyme, which will help caramelize the onions, cooking for an additional 10 minutes until they are golden brown and deeply caramelized. If using, stir in the balsamic vinegar and cook for another 2 minutes. Remove from heat and set aside.

      Preheat a griddle or pan over medium heat for cooking the grilled cheese sandwiches.

        Take two slices of sourdough and layer them with half of the gruyère and cheddar cheeses. Top this with a generous scoop of the caramelized onion mixture, followed by the remaining cheese. Top with the second slice of sourdough.

          Lightly butter the outside of the sandwich, then place it onto the heated griddle. Cook for about 4-5 minutes on each side, or until the bread is golden brown and the cheese is melted and gooey, checking to ensure it doesn’t burn.

            Once cooked, remove the sandwich from the skillet and let it cool for just a moment before slicing it in half.
