4 slices of thick sourdough bread

1 cup Gouda cheese, grated

1 cup mushrooms (such as cremini or shiitake), sliced

1 medium onion, thinly sliced

2 tablespoons unsalted butter

1 tablespoon olive oil

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

Salt and pepper to taste

Optional: 1 teaspoon balsamic vinegar for extra flavor

Roast the Mushrooms and Onions: Preheat your oven to 400°F (200°C). In a baking dish, combine the sliced mushrooms and onions. Drizzle with olive oil and sprinkle with fresh thyme, salt, and pepper. Toss to coat evenly. Roast in the oven for about 20 minutes, stirring halfway through, until they are tender and caramelized. If using, drizzle with balsamic vinegar before removing from the oven.

    Prepare the Bread: While the mushrooms and onions are roasting, take the slices of sourdough bread and butter one side of each slice generously. This will create a nice, crispy exterior when grilled.

      Assemble the Sandwich: On the unbuttered side of two slices of bread, start layering with half of the grated Gouda cheese. Top with the roasted mushrooms and onions, followed by the remaining Gouda cheese. Place the other slices of bread on top, buttered side facing out.

        Grill the Sandwich: Heat a skillet over medium heat. Once hot, carefully place the assembled sandwiches in the skillet. Cook for about 4-5 minutes on one side until golden brown. Flip and grill the other side for another 4-5 minutes, pressing down slightly with a spatula until both sides are golden and the cheese has melted.

          Serve: Remove the sandwiches from the skillet and let them sit for a minute before slicing them in half. This allows the melted cheese to set a bit.
