1 lb ground beef

1 can (15 oz) kidney beans, rinsed and drained

1 can (15 oz) black beans, rinsed and drained

1 can (28 oz) crushed tomatoes

1 medium onion, diced

3 cloves garlic, minced

1 green bell pepper, diced

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and pepper to taste

2 tablespoons olive oil

Optional toppings: shredded cheese, sour cream, chopped cilantro, diced green onions

Instructions
 

In a large pot, heat the olive oil over medium heat.

    Add the diced onion and green bell pepper, cooking until the onion is translucent, about 5 minutes.

      Stir in the minced garlic and cook for an additional minute, ensuring the garlic does not burn.

        Increase the heat to medium-high and add the ground beef, breaking it apart with a wooden spoon. Cook until browned, about 5-7 minutes.

          Drain any excess fat from the pot, if necessary.

            Sprinkle the chili powder, cumin, smoked paprika, dried oregano, salt, and pepper over the beef, stirring to coat. Cook for 2 minutes to toast the spices.

              Add the crushed tomatoes, kidney beans, and black beans to the pot. Stir to combine.

                Bring the mixture to a simmer, then reduce the heat to low. Cover and let it cook for at least 30-45 minutes, stirring occasionally. For a richer flavor, simmer for up to 1.5 hours.

                  Taste and adjust seasonings if needed.

                    Serve hot, garnished with your choice of shredded cheese, sour cream, chopped cilantro, or diced green onions.
