4 boneless chicken thighs

3 tablespoons olive oil

2 cloves garlic, minced

1 tablespoon dried oregano

1 teaspoon paprika

1 teaspoon onion powder

Salt and pepper to taste

4 pita bread or flatbreads

1 large tomato, diced

1 cucumber, sliced

1 small red onion, thinly sliced

Fresh parsley, chopped (for garnish)

For the Tzatziki Sauce:

1 cup Greek yogurt

1 small cucumber, grated and excess moisture squeezed out

1 clove garlic, minced

1 tablespoon olive oil

1 tablespoon lemon juice

Salt and pepper to taste

Marinate the Chicken: In a bowl, mix together olive oil, minced garlic, oregano, paprika, onion powder, salt, and pepper. Add the chicken thighs and coat them well. Cover and marinate in the refrigerator for at least 30 minutes (or up to overnight for more flavor).

    Make the Tzatziki Sauce: In a small bowl, combine Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, salt, and pepper. Mix until smooth and well combined. Refrigerate until ready to serve.

      Cook the Chicken: Preheat a grill pan or outdoor grill over medium-high heat. Remove the chicken from the marinade and cook for about 5-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is nicely charred. Let the chicken rest for a few minutes before slicing it into strips.

        Warm the Pita Bread: While the chicken is resting, warm the pita bread on the grill or in a dry skillet for about 1-2 minutes per side until soft and pliable.

          Assemble the Gyros: To assemble, place sliced chicken onto the warmed pita bread. Top with diced tomatoes, sliced cucumber, red onion, and a generous dollop of homemade tzatziki sauce.
