4 medium green apples, chopped (Granny Smith works well)

2 cups granulated sugar

1 cup water

1 tablespoon lemon juice

1 teaspoon vanilla extract

1/2 teaspoon cinnamon (optional)

Prepare the Apples: Wash and chop the green apples into small chunks, keeping the skin on for added flavor and nutrients. Remove the seeds.

    Combine Ingredients: In a large saucepan, combine the chopped apples, sugar, water, lemon juice, and a pinch of salt. Stir until the sugar is mostly dissolved.

      Cook the Mixture: Place the saucepan over medium heat and bring the mixture to a gentle boil. Reduce the heat to low and let it simmer for about 30 minutes, stirring occasionally, until the apples are soft and the syrup starts to thicken.

        Blend for Smoothness: Once the apples are soft, remove the pan from heat. Use an immersion blender to puree the mixture until smooth, or carefully transfer it to a regular blender in batches.

          Strain the Syrup: To achieve a clear syrup, strain the mixture through a fine-mesh sieve or cheesecloth back into the saucepan, pressing lightly to extract all the liquid from the solids. Discard the solids.

            Add Flavor: Return the strained syrup to the stove over low heat and stir in the vanilla extract and cinnamon (if using). Let simmer for an additional 5-10 minutes to deepen the flavor.

              Cool and Store: Once desired consistency is reached, remove the saucepan from heat. Allow the syrup to cool to room temperature. Transfer it to a clean glass jar or bottle and refrigerate.
