Grilled Flank Steak with Tomato Pepper Salsa

1.5 lbs flank steak

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup cherry tomatoes, halved

1 red bell pepper, diced

1 yellow bell pepper, diced

1 small red onion, finely chopped

1 jalapeño, seeded and minced

2 tablespoons fresh cilantro, chopped

1 lime, juiced

Instructions
 

Marinate the Steak: In a small bowl, mix together the olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Rub this mixture all over the flank steak. Allow the steak to marinate at room temperature for 30 minutes.

    Prepare the Salsa: In a medium bowl, combine the halved cherry tomatoes, diced red and yellow bell peppers, chopped red onion, minced jalapeño, and fresh cilantro. Squeeze the lime juice over the mixture, season with salt, and toss gently. Set aside for flavors to meld.

      Preheat the Grill: Heat your grill to medium-high heat. If using a grill pan, preheat it over medium-high heat as well.

        Grill the Steak: Once the grill is hot, place the marinated flank steak on it. Cook for about 5-7 minutes on one side, then flip and grill for another 5-7 minutes for medium-rare. Adjust the time to your liking for more or less doneness.

          Rest the Steak: Once cooked, remove the steak from the grill and let it rest on a cutting board for about 5-10 minutes. This allows the juices to redistribute for a more flavorful bite.

            Slice and Serve: After resting, thinly slice the steak against the grain. Serve immediately, topped generously with the tomato pepper salsa.
