1 cup unsalted butter, softened

1/2 cup powdered sugar

2 cups all-purpose flour

1/4 cup cornstarch

1/2 teaspoon salt

1 teaspoon vanilla extract

1/2 cup freeze-dried strawberries, crushed

1/4 cup strawberry jam

Extra powdered sugar for dusting (optional)

In a large mixing bowl, cream the softened butter and powdered sugar together until light and fluffy, about 2-3 minutes.

    Add the vanilla extract and continue mixing until well combined.

      Sift together the all-purpose flour, cornstarch, and salt in a separate bowl. Gradually add this dry mixture to the wet ingredients, mixing on low speed until fully incorporated.

        Gently fold in the crushed freeze-dried strawberries, ensuring an even distribution throughout the dough.

          Form the dough into a ball, wrap it in plastic wrap, and chill in the refrigerator for at least 1 hour to firm up.

            Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

              On a lightly floured surface, roll out the chilled dough to about 1/4-inch thickness. Use a heart-shaped cookie cutter to cut out heart shapes and place them on the prepared baking sheets.

                Using a small spoon, place a dollop of strawberry jam in the center of half of the heart cookies.

                  Take the remaining heart cookies and place them on top of the jam-covered cookies to create a sandwich, pressing gently to seal.

                    Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden. Allow to cool for 5 minutes on the baking sheet before transferring them to a wire rack to cool completely.

                      Once cooled, dust with extra powdered sugar if desired, for a lovely finish.
