8 oz. rice noodles

1 lb. beef flank steak, thinly sliced

1 tablespoon vegetable oil

1 red bell pepper, sliced

1 yellow bell pepper, sliced

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1/2 cup hoisin sauce

2 tablespoons soy sauce

1 tablespoon sesame oil

1/4 cup green onions, chopped

Sesame seeds for garnish

Optional: Sriracha for extra heat

Cook the noodles: Begin by bringing a large pot of water to a boil. Add the rice noodles and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the beef: In a large bowl, marinade the thinly sliced beef with hoisin sauce and soy sauce. Allow it to sit for about 15 minutes for the flavors to meld.

      Stir-fry the vegetables: Heat vegetable oil in a large skillet or wok over medium-high heat. Add the sliced bell peppers, garlic, and ginger. Stir-fry for about 3-4 minutes until the peppers are slightly tender but still crisp. Remove the vegetables from the skillet and set aside.

        Cook the beef: In the same skillet, add the marinated beef and spread it out in a single layer. Sear for 2-3 minutes on one side until browned, then flip to cook the other side until just cooked through, about another 2-3 minutes.

          Combine and heat through: Return the vegetables to the skillet with the beef. Add the cooked rice noodles and drizzle sesame oil over everything. Toss gently to combine and heat through for another 2-3 minutes, ensuring all ingredients are well-coated.

            Garnish and serve: Once everything is heated through and well mixed, remove from heat. Serve the noodles topped with chopped green onions and a sprinkle of sesame seeds. For an extra kick, drizzle Sriracha on top if desired.
