1 cup fresh cherries, pitted and halved

1 cup granulated sugar

1 cup water

1 cup freshly squeezed lime juice (about 8-10 limes)

4 cups sparkling water (or club soda)

Lime slices and cherries for garnish

Fresh mint leaves (optional)

Instructions
 

In a small saucepan, combine the pitted and halved cherries, sugar, and water.

    Heat over medium heat until the sugar has dissolved and the cherries begin to break down, about 5-7 minutes, stirring occasionally.

      Remove from heat and let the cherry mixture cool to room temperature.

        Once cooled, strain the cherry mixture through a fine mesh sieve into a bowl, pressing gently to extract as much juice as possible. Discard the solids.

          In a large pitcher, combine the cherry syrup with the freshly squeezed lime juice. Stir well to combine.

            Slowly add the sparkling water to the pitcher, stirring gently to mix while retaining the bubbles.

              Taste and adjust sweetness by adding more sugar or lime juice as needed.

                Serve the cherry limeade over ice in tall glasses, garnishing each with lime slices, whole cherries, and mint leaves if desired.
