1 large egg (room temperature)

1 tablespoon Dijon mustard

1 tablespoon lemon juice (freshly squeezed)

1 cup neutral oil (such as canola or sunflower)

1 teaspoon apple cider vinegar

Salt to taste

Pinch of white pepper (optional)

Instructions
 

Start by cracking the egg into a tall, narrow container suitable for an immersion blender (a mason jar works great).

    Add the Dijon mustard, lemon juice, apple cider vinegar, and a pinch of salt.

      Pour the neutral oil over the egg mixture, ensuring the oil covers the egg completely.

        Place the immersion blender at the bottom of the container, then turn it on to the highest speed, keeping it at the bottom for about 20 seconds.

          As the mayonnaise starts to emulsify, slowly lift the immersion blender up through the mixture, allowing the oil to incorporate gradually. Continue blending until the mayonnaise is thick and creamy, about 1-2 minutes total.

            Taste and add more salt, lemon juice, or white pepper according to your preference. Blend briefly to mix in any additional seasonings.

              Transfer the homemade mayonnaise to a clean jar with a lid and store it in the refrigerator.
