1 pound baby carrots, trimmed and peeled

2 tablespoons harissa paste

2 tablespoons honey

2 tablespoons olive oil

Salt and pepper, to taste

1/2 cup feta cheese, crumbled

1/4 cup Greek yogurt

1 tablespoon lemon juice

Fresh parsley, chopped (for garnish)

Toasted pistachios, chopped (optional for crunch)

Instructions
 

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

    In a large bowl, combine the baby carrots, harissa paste, honey, olive oil, salt, and pepper. Toss the carrots until they are well coated.

      Spread the coated carrots evenly on the prepared baking sheet. Roast in the preheated oven for about 25-30 minutes, or until the carrots are tender and caramelized, stirring halfway through for even cooking.

        While the carrots are roasting, prepare the whipped feta. In a food processor, combine the crumbled feta cheese, Greek yogurt, and lemon juice. Blend until smooth and creamy. Adjust seasoning with salt if needed.

          Once the carrots are done roasting, remove them from the oven and let them cool slightly.

            To assemble, spread the whipped feta generously on a serving platter and top it with the warm honey harissa carrots.
