Instructions
In a mixing bowl, combine honey, lime juice, lime zest, olive oil, smoked paprika, garlic powder, salt, and pepper to create a marinade.
Add the shrimp to the marinade and toss to coat evenly. Let it marinate for 15-20 minutes for optimal flavor.
While the shrimp marinates, heat a skillet over medium-high heat. Once hot, add the shrimp along with the marinade.
Cook the shrimp for about 3-4 minutes on each side, or until they turn pink and are cooked through. Remove from heat.
Warm the corn tortillas in a separate skillet for about 30 seconds on each side or until pliable.
To assemble the tacos, place a few shrimp on each tortilla, followed by a generous handful of shredded cabbage and a slice of avocado.
Garnish with fresh cilantro and a squeeze of lime juice over the top.
