Honey Mustard Chicken

4 boneless, skinless chicken breasts

1/4 cup honey

1/4 cup Dijon mustard

2 tablespoons apple cider vinegar

2 cloves garlic, minced

1 teaspoon dried thyme

Salt and black pepper, to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

In a small bowl, whisk together honey, Dijon mustard, apple cider vinegar, minced garlic, thyme, salt, and black pepper until well combined. This will be your marinade.

    Place the chicken breasts in a ziplock bag or shallow dish, and pour the honey mustard marinade over them. Seal the bag or cover the dish, and let the chicken marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more intense flavor).

      Preheat your oven to 375°F (190°C).

        Heat olive oil in an oven-safe skillet over medium heat. Once hot, remove the chicken from the marinade (reserve the marinade) and place the chicken in the skillet. Sear for about 3-4 minutes on each side, until golden brown.

          Once the chicken is browned, pour the reserved marinade over the chicken and transfer the skillet to the preheated oven. Bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).

            Remove the skillet from the oven and let the chicken rest for 5 minutes. This helps to retain the juices.

              Slice the chicken and drizzle some of the baked marinade from the pan over the top. Garnish with chopped parsley before serving.
