4 salmon fillets (about 6 ounces each)

1 cup fresh pineapple, diced

1/4 cup honey

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon fresh ginger, grated

2 cloves garlic, minced

Juice of 1 lime

1 tablespoon olive oil

Salt and pepper, to taste

Sliced green onions, for garnish

Fresh cilantro, chopped, for garnish

Prepare the Marinade: In a medium bowl, whisk together honey, soy sauce, grated ginger, minced garlic, and lime juice until well combined.

    Marinate the Salmon: Place the salmon fillets in a shallow dish and pour the marinade over them, making sure they are well-coated. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.

      Preheat the Grill/Pan: If using a grill, preheat it to medium-high heat. Alternatively, heat a non-stick skillet over medium heat on the stove.

        Cook the Pineapple: In a small bowl, toss the diced pineapple with olive oil and a pinch of salt and pepper. Grill or sauté the pineapple for about 3-4 minutes until slightly caramelized and golden brown. Set aside.

          Cook the Salmon: Remove the salmon from the marinade (reserving the marinade) and season with salt and pepper. Grill the salmon for about 4-5 minutes on each side or until it flakes easily with a fork and is cooked to your liking. If using a skillet, cook the same way, adding the reserved marinade to the skillet towards the last minute to create a glaze.

            Serve: On a serving plate, place the grilled salmon fillets and top each with the sautéed pineapple. Drizzle any remaining glaze from the skillet over the salmon.

              Garnish: Finish with sliced green onions and fresh cilantro for added flavor and presentation.
