1 cup long-grain white rice

4 cups water (divided)

1 cup milk (or dairy-free alternative)

1/2 cup sweetened condensed milk (or coconut milk for a vegan option)

1 tablespoon vanilla extract

1 teaspoon ground cinnamon (plus extra for garnish)

1/2 cup brewed coffee (strongly brewed for best flavor)

Pinch of salt

Ice for serving

Instructions
 

Rinse the rice under cold water until the water runs clear. This helps remove excess starch.

    In a blender, combine the rinsed rice and 2 cups of water. Blend on high for about 1-2 minutes until the rice is mostly broken up.

      Pour the rice mixture into a jar or bowl, covering it with the remaining 2 cups of water. Let it soak for at least 4 hours or, for best results, overnight.

        After soaking, strain the rice water through a fine mesh sieve or cheesecloth into a large bowl, pressing the mixture to extract as much liquid as possible. Discard the solids.

          To the strained rice water, add the milk, sweetened condensed milk, vanilla extract, ground cinnamon, brewed coffee, and a pinch of salt. Whisk until well combined.

            Taste the horchata de café and adjust sweetness or cinnamon if desired.

              Serve over ice in tall glasses, garnishing each glass with a sprinkle of ground cinnamon.
