1 cup of homemade Avanaise (avocado-based mayonnaise)

1/2 cup freshly grated Parmesan cheese

1/2 cup croutons (store-bought or homemade)

1 clove garlic, minced

1 tablespoon Dijon mustard

2 tablespoons lemon juice

Salt and black pepper to taste

Optional: anchovy paste (1 teaspoon) for added depth

Optional: cherry tomatoes, halved, for garnish
