1 cup whole milk

1/2 cup heavy cream

3 large egg yolks

1/4 cup granulated sugar

1 teaspoon vanilla extract

1/4 cup caramel sauce, plus extra for drizzling

1 cup ice cubes

Whipped cream for topping

Pinch of sea salt

Instructions
 

In a medium saucepan, heat the milk and heavy cream over medium heat until just steaming. Remove from heat and set aside.

    In a separate bowl, whisk together the egg yolks, granulated sugar, and vanilla extract until smooth and well combined.

      Slowly pour the warm milk mixture into the egg yolk mixture while whisking continuously to temper the eggs. This will prevent them from curdling.

        Pour the combined mixture back into the saucepan and cook over low heat, stirring constantly until it thickens slightly and coats the back of a spoon, about 5-7 minutes. Don’t let it boil!

          Remove from heat and stir in the caramel sauce and a pinch of sea salt. Let this custard mixture cool to room temperature.

            Once cooled, transfer the custard to a blender, add the ice cubes, and blend until smooth and frothy.

              Pour the frappe into tall glasses, leaving some room at the top for whipped cream.

                Top each glass with a generous dollop of whipped cream and drizzle some additional caramel sauce over it.
