1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (adjust to taste)

1 1/2 cups cherry tomatoes, halved

2 cups baby spinach

1 cup heavy cream

3 cups chicken broth

12 ounces penne or rotini pasta

1/2 cup freshly grated Parmesan cheese

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions
 

Turn on the Instant Pot and select the Sauté function. Add olive oil and allow it to heat for a minute.

    Add the chicken pieces to the pot and season with salt, pepper, Italian seasoning, and red pepper flakes. Sauté until the chicken is browned on all sides, about 5-7 minutes.

      Stir in the minced garlic and cook for another minute until fragrant.

        Add the halved cherry tomatoes and spinach to the pot, sautéing until the spinach has wilted, about 1-2 minutes.

          Pour in the chicken broth and add the pasta, ensuring it is submerged in the liquid.

            Secure the lid on the Instant Pot and set it to Manual or Pressure Cook on high for 5 minutes.

              Once the cooking cycle is complete, quickly release the pressure by turning the valve. Carefully open the lid.

                Stir in the heavy cream and Parmesan cheese until fully combined and creamy. Allow it to simmer on the Sauté setting for an additional 2-3 minutes to thicken if desired.

                  Taste and adjust seasoning with more salt and pepper if needed.

                    Serve hot, garnished with fresh basil leaves for an added touch.
