6 slices of thick-cut Irish bacon (or smoked bacon)

1 medium onion, chopped

2 cloves garlic, minced

4 medium potatoes, peeled and diced

4 cups vegetable or chicken broth

2 cups green cabbage, shredded

1 teaspoon dried thyme

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the bacon and cook until crispy, about 5-7 minutes. Remove the bacon from the pot and set aside on a paper towel to drain.

    In the same pot, add the chopped onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.

      Add the diced potatoes to the pot and stir to combine with the onions and garlic. Cook for another 5 minutes, stirring occasionally.

        Pour in the vegetable or chicken broth and add the dried thyme. Bring the mixture to a boil, then reduce heat and let it simmer for about 15 minutes, or until the potatoes are tender.

          Once the potatoes are cooked, add the shredded cabbage to the pot. Continue to simmer for an additional 5 minutes until the cabbage is wilted and tender.

            Crumble the reserved bacon and stir it back into the soup. Season with salt and pepper to taste.

              Remove from heat and let cool slightly before serving.

                Ladle the soup into bowls and garnish with fresh chopped parsley.
