8 ounces Irish bacon or back bacon, diced

1 medium onion, chopped

2 cloves garlic, minced

4 medium potatoes, peeled and diced

4 cups vegetable or chicken broth

3 cups green cabbage, chopped

1 cup leeks, sliced (white part only)

1 teaspoon thyme

1 teaspoon black pepper

Salt to taste

2 tablespoons fresh parsley, chopped (for garnish)

Optional: A splash of heavy cream for richness

Instructions
 

In a large pot over medium heat, add the diced Irish bacon and cook until crispy. Remove the bacon from the pot and set aside, leaving the bacon fat in the pot.

    In the same pot, add the chopped onion and leeks. Sauté for 4-5 minutes until they become translucent and slightly caramelized.

      Stir in the minced garlic and cook for another minute until fragrant.

        Add the diced potatoes, thyme, black pepper, and a pinch of salt to the pot. Stir well to combine with the onions and leeks.

          Pour in the vegetable or chicken broth and bring the mixture to a boil. Once boiling, reduce the heat and let it simmer for about 15 minutes, or until the potatoes are fork-tender.

            Add the chopped cabbage to the pot and continue to simmer for another 10 minutes until the cabbage is tender.

              If desired, stir in a splash of heavy cream for added richness, adjusting salt and pepper to taste.

                To serve, ladle the soup into bowls, topping each with the reserved crispy bacon and a sprinkle of fresh parsley.
