1 lb (450g) floury potatoes, such as Russet or Yukon Gold, peeled and quartered

1 cup kale, finely chopped

1 cup green cabbage, finely chopped

1/2 cup green onions, sliced

1/2 cup milk or cream

1/4 cup unsalted butter

Salt and pepper to taste

A pinch of nutmeg (optional)

Boil the Potatoes: Place the peeled and quartered potatoes in a large pot; cover with salted water. Bring to a boil and cook until tender, about 15-20 minutes. Drain and allow to steam dry for a few minutes.

    Sauté the Greens: In a large skillet, melt the butter over medium heat. Add the chopped kale and cabbage. Sauté for about 5 minutes until the greens are wilted and soft. Stir in the sliced green onions and cook for another 2 minutes.

      Mash the Potatoes: Return the drained potatoes to the pot. Add the milk or cream, and mash until smooth and creamy. Season with salt, pepper, and nutmeg if using.

        Combine Everything: Gently fold the sautéed greens into the mashed potatoes until well incorporated. Make sure not to overmix; you want the greens to remain visible for that lovely color contrast.
