1/4 cup unsalted butter, melted

2 tablespoons sugar

8 oz cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1/2 cup crushed pineapple, drained

1/4 cup diced pineapple (for topping)

1/4 teaspoon cinnamon

Prepare the Crust: In a mixing bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until all crumbs are moistened, then press the mixture firmly into the bottom of a silicone or mini muffin tray to create a crust layer.
