4 slices of sourdough bread

4 ounces of fresh mozzarella, sliced

2 ounces of provolone cheese, sliced

1 ripe tomato, thinly sliced

1/4 cup fresh basil leaves

2 tablespoons pesto

2 tablespoons olive oil

Salt and pepper to taste

Instructions
 

Preheat a skillet or griddle over medium heat.

    Drizzle 1 tablespoon of olive oil in the skillet to coat the bottom.

      Spread 1 tablespoon of pesto on one side of each slice of sourdough bread.

        Place 2 slices of bread, pesto side up, onto the skillet.

          Layer fresh mozzarella, provolone, tomato slices, and basil leaves evenly on the bread in the skillet.

            Season with a pinch of salt and pepper to enhance the flavors.

              Top the sandwiches with the remaining slices of bread, pesto side down.

                Cook for about 3-4 minutes until the bottom is golden brown and the cheeses begin to melt.

                  Carefully flip the sandwiches using a spatula and add the remaining tablespoon of olive oil to the skillet.

                    Grill for another 3-4 minutes until the second side is golden brown and crispy, and the cheese is fully melted.

                      Remove from the skillet, slice diagonally, and serve warm.
