In a large mixing bowl, combine the shredded chicken, softened cream cheese, cheddar cheese, pepper jack cheese, diced jalapeños, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix until well combined and creamy.
Lightly grease a 9x13 inch baking dish with olive oil. Spoon the chicken mixture into the baking dish, spreading it out evenly.
In a small bowl, mix the breadcrumbs with the remaining 2 tablespoons of olive oil until they are evenly coated. Sprinkle the breadcrumb mixture over the top of the casserole to create a crispy layer.
Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the casserole is bubbly and the breadcrumbs are golden brown.
Remove from the oven and allow it to cool for a few minutes. Garnish with sliced green onions before serving.
