2 tablespoons green tea leaves

1/2 teaspoon baking soda

2 cups whole milk (or almond milk for a vegan option)

1/4 cup sugar (adjust to taste)

1/4 teaspoon cardamom powder

Chopped pistachios and almonds for garnish

A pinch of saffron strands (optional)

In a large saucepan, bring the water to a boil over medium heat.

    Once boiling, add the green tea leaves and baking soda. The baking soda enhances the color and flavor.

      Reduce the heat to low and simmer for about 10-15 minutes, stirring occasionally until the mixture is reduced by half and a deep red hue is achieved.

        Remove the saucepan from heat and allow it to cool slightly.

          Using a strainer, strain the tea mixture into a clean saucepan, discarding the used tea leaves.

            Place the saucepan back on low heat and gradually whisk in the milk, allowing the mixture to froth.

              Add sugar, stirring until fully dissolved, followed by the cardamom powder for flavor.

                Continue to whisk vigorously to achieve a creamy, frothy texture, turning the chai a beautiful pink color.

                  If desired, soak the saffron strands in a teaspoon of warm water and add to the chai for extra aroma and flavor.

                    Pour the Kashmiri Pink Chai into cups, garnishing with chopped pistachios and almonds on top.
