1 pound of hand-sliced pastrami

2 slices of rye bread

2 tablespoons yellow mustard

1/4 cup dill pickle slices

1/4 cup Swiss cheese (optional)

1 tablespoon butter

Instructions
 

Start by preheating a skillet or griddle over medium heat.

    While the skillet is heating, lay the slices of rye bread flat on a clean surface. Spread one tablespoon of yellow mustard evenly on each slice.

      Generously layer the hand-sliced pastrami on one of the mustard-brushed slices until well-covered. If you’re adding Swiss cheese, place it on top of the pastrami.

        Add the dill pickle slices on top of the pastrami (and cheese if using), then place the second slice of bread, mustard side down, on top to complete the sandwich.

          Melt the butter in the preheated skillet, ensuring it coats the surface.

            Carefully place the sandwich in the skillet. Cook for about 4-5 minutes until the bottom side is golden brown and crispy.

              Flip the sandwich using a spatula and press down gently with the spatula or a heavy plate to compress it, helping the cheese melt and flavors meld. Cook for another 4-5 minutes on the other side.

                Once both sides are crispy and the cheese is melted (if used), remove from the skillet and let it rest for a minute or two.

                  Slice the sandwich in half diagonally for serving, revealing the delicious layers inside.
