Ingredients

2 ribeye steaks (about 1 inch thick)

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 teaspoon coarse sea salt

1/2 teaspoon freshly cracked black pepper

Fresh rosemary sprigs (for garnish)

Lemon wedges (for serving)

Instructions

Prep the Steaks: Remove the ribeye steaks from the refrigerator and let them sit at room temperature for about 30 minutes before cooking. This helps them cook evenly.

Season the Steaks: In a small bowl, mix together olive oil, garlic powder, smoked paprika, sea salt, and black pepper. Rub this mixture generously over both sides of each steak.

Heat the Grill or Pan: Preheat your grill to high heat (or use a cast-iron skillet on the stovetop over medium-high heat). Make sure it’s nice and hot before cooking the meat.

Cook the Steaks: Place the steaks on the hot grill or skillet. For medium-rare, cook for approximately 4 to 5 minutes on one side without moving them. Flip the steaks and cook for an additional 3 to 4 minutes. Adjust time based on desired doneness.

Rest the Steaks: Once cooked, transfer the steaks to a plate and cover with foil. Let them rest for 5 minutes to allow the juices to redistribute throughout the meat.

Serve: Slice the steaks against the grain for maximum tenderness. Garnish with fresh rosemary sprigs and serve with lemon wedges on the side for a zesty finish.
