9 lasagna noodles

2 cups ricotta cheese

2 cups shredded mozzarella cheese

2 cups marinara sauce (preferably homemade or organic)

1 cup cooked spinach, chopped

1 medium zucchini, thinly sliced

1 red bell pepper, diced

1/2 cup grated Parmesan cheese

1 teaspoon dried oregano

1 teaspoon garlic powder

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions
 

Preheat your oven to 375°F (190°C).

    Cook the lasagna noodles according to package instructions until al dente, drain, and lay them flat on parchment paper to prevent sticking.

      In a mixing bowl, combine ricotta cheese, chopped spinach, oregano, garlic powder, salt, and pepper until well mixed.

        In a 9x13 inch baking dish, spread a thin layer of marinara sauce on the bottom.

          Place three lasagna noodles over the sauce. Spread half of the ricotta mixture over the noodles, followed by half of the zucchini and bell pepper slices. Top with a third of the mozzarella cheese.

            Repeat the layers: marinara sauce, three noodles, remaining ricotta mixture, remaining vegetables, and half of the mozzarella.

              Finish with a final layer of three noodles, the remaining marinara sauce, and the rest of the mozzarella and Parmesan cheese.

                Cover the dish with aluminum foil (avoid touching the cheese) and bake for 30 minutes.

                  Remove the foil and bake for an additional 15 minutes or until the cheese is bubbly and golden.

                    Let the lasagna cool for about 10 minutes before slicing. Garnish with fresh basil before serving.
