Ingredients

8 slices of sourdough bread

2 cups ricotta cheese

2 cups marinara sauce

2 cups shredded mozzarella cheese

1 cup grated Parmesan cheese

1 large egg

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and black pepper, to taste

4 tablespoons unsalted butter

Instructions

In a large bowl, mix the ricotta cheese, grated Parmesan, egg, dried oregano, dried basil, salt, and pepper until well combined. Set aside.

Heat a skillet over medium heat and add 2 tablespoons of butter.

Spread marinara sauce on one side of each slice of sourdough bread.

On the other side of half of the slices, generously spread the ricotta mixture and sprinkle with mozzarella cheese.

Top each of these slices with another slice of bread (sauce side down) to form sandwiches.

In the heated skillet, place the sandwiches and cook until golden brown on one side, about 3-4 minutes.

Carefully flip the sandwiches, adding the remaining butter to the skillet if needed, and cook for an additional 3-4 minutes until golden and the cheese is melted.

Remove from the skillet and let cool for a minute before slicing in half.
