2 cups all-purpose flour

1/4 teaspoon baking powder

Zest of 2 lemons

1/4 cup freshly squeezed lemon juice

2 large eggs

1/2 cup powdered sugar (for dusting)

Preheat your oven to 350°F (175°C) and line a 9x13-inch baking pan with parchment paper, allowing some overhang for easy removal later.

    In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.

      Add the lemon zest and mix well until combined.

        In another bowl, whisk together the flour, salt, and baking powder. Gradually add this dry mixture to the butter mixture, mixing on low speed until just combined.

          In a medium bowl, whisk together the lemon juice, eggs, and vanilla extract. Slowly pour this mixture into the dough, mixing until completely blended. The batter will be somewhat thick.

            Spread the cookie batter evenly into the prepared baking pan, smoothing the top with a spatula.

              Bake in the preheated oven for 20-25 minutes or until the edges are slightly golden and a toothpick inserted in the center comes out clean.

                Allow the cookies to cool in the pan for 10 minutes before using the parchment paper to lift them out and cool completely on a wire rack.
