Ingredients

4 cod fillets (about 6 oz each)

1/4 cup unsalted butter

2 tablespoons olive oil

Zest and juice of 1 large lemon

2 cloves garlic, minced

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

Salt and pepper to taste

1/4 cup fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions

Pat the Cod Dry: Start by patting the cod fillets with paper towels to remove excess moisture. This will help them sear nicely. Season both sides with salt and pepper.

Heat the Pan: In a large non-stick skillet, heat the olive oil over medium-high heat.

Sauté the Cod: Once the oil is hot, carefully place the cod fillets in the pan. Cook for about 4-5 minutes on one side, until golden brown and slightly crisp. Gently flip the fillets and cook for another 3-4 minutes on the other side until cooked through and flaky. Remove the cod from the pan and set aside on a plate.

Make Lemon Butter Sauce: In the same skillet, reduce the heat to medium and add the butter. Allow it to melt and foam, then add minced garlic and sauté for about 30 seconds until fragrant. Be careful not to burn the garlic.

Add Lemon Flavor: Stir in the lemon zest, lemon juice, and thyme. Cook for another minute, allowing the flavors to meld together.

Combine and Serve: Return the cod fillets to the skillet, spooning the sauce over them to coat. Cook for an additional minute to warm through.

Garnish: Serve immediately, garnishing with chopped parsley and lemon wedges on the side.
