1 cup all-purpose flour

1 cup whole wheat flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 cup cream cheese, softened

1 cup granulated sugar

1/2 cup unsalted butter, softened

2 large eggs

1/4 cup whole milk

Zest of 1 lemon

1/4 cup fresh lemon juice

1 teaspoon vanilla extract

1/2 cup powdered sugar (for glaze)

1-2 tablespoons lemon juice (for glaze)

Instructions
 

Preheat your oven to 350°F (175°C) and line a standard muffin tin with paper liners or grease with non-stick spray.

    In a mixing bowl, combine the all-purpose flour, whole wheat flour, baking powder, baking soda, and salt. Whisk together to blend the dry ingredients well.

      In a separate large mixing bowl, beat together the softened cream cheese, granulated sugar, and butter until smooth and creamy using an electric mixer on medium-high speed (about 3-4 minutes).

        Add the eggs one at a time, mixing well after each addition until fully incorporated.

          Stir in the milk, lemon zest, lemon juice, and vanilla extract until just combined.

            Gradually add the dry ingredients to the wet mixture, folding gently until no flour streaks remain. Be careful not to over-mix.

              Divide the batter evenly among the muffin cups, filling each about 2/3 full.

                Bake in the preheated oven for 18-22 minutes or until a toothpick inserted in the center of a muffin comes out clean.

                  While the muffins are baking, prepare the glaze by whisking together the powdered sugar and the lemon juice in a small bowl until smooth.

                    Once the muffins are done, allow them to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

                      Once cooled, drizzle the glaze over the muffins for a sweet, tangy finish.
