In a small bowl, mix together the olive oil, chopped dill, lemon zest, lemon juice, minced garlic, salt, and pepper. This will be your marinade.
Pat the salmon fillets dry with a paper towel and place them skin-side down on a baking sheet lined with parchment paper.
Brush the marinade generously over the top of each salmon fillet, ensuring even coverage.
Let the salmon marinate for about 15-20 minutes to absorb the flavors.
Place the baking sheet in the preheated oven and roast the salmon for 12-15 minutes, or until the salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
Once cooked, remove from the oven and let it rest for a couple of minutes.
Serve the salmon garnished with lemon slices and fresh dill sprigs.
