Instructions
Preheat your oven to 400°F (200°C).
In a large mixing bowl, combine the halved Brussels sprouts, olive oil, minced garlic, lemon zest, lemon juice, salt, black pepper, and red pepper flakes (if using). Toss well to ensure all the sprouts are evenly coated.
Spread the seasoned Brussels sprouts on a baking sheet in a single layer, cut side down for better caramelization.
Roast in the preheated oven for 20-25 minutes, stirring halfway through, until the sprouts are golden brown and tender.
Once roasted, remove from the oven and sprinkle with grated Parmesan cheese, if using. Return to the oven for an additional 2-3 minutes until the cheese is melted.
Remove from the oven, and drizzle with extra lemon juice if desired. Garnish with freshly chopped parsley before serving.
