2 cans (5 oz each) of tuna, drained

1/2 cup breadcrumbs (preferably panko)

1/4 cup mayonnaise

1 large egg

2 tablespoons lemon juice (freshly squeezed)

1 tablespoon lemon zest

2 cloves garlic, minced

1/4 cup green onions, finely chopped

1 teaspoon dried dill

Salt and pepper to taste

1/4 cup olive oil (for frying)

Fresh parsley, chopped (for garnish)

In a large mixing bowl, combine the drained tuna, breadcrumbs, mayonnaise, and egg. Mix well until all ingredients are thoroughly combined.

    Add in the lemon juice, lemon zest, minced garlic, chopped green onions, and dried dill. Season with salt and pepper to taste. Stir until the mixture holds together.

      Form the mixture into small patties, about 2-3 inches in diameter. Place them on a plate and refrigerate for about 30 minutes to help them firm up.

        Heat olive oil in a large skillet over medium heat. Once hot, carefully place the tuna cakes in the skillet, cooking in batches if necessary to avoid overcrowding.

          Cook each patty for about 3-4 minutes on each side, or until golden brown and crispy. Flip gently to avoid breaking.

            Once cooked, transfer the tuna cakes to a paper towel-lined plate to drain excess oil.
