Ingredients

1 pound large shrimp, peeled and deveined

3 tablespoons olive oil

4 cloves garlic, minced

Zest of 1 lemon

2 tablespoons fresh lemon juice

2 tablespoons fresh parsley, chopped

1 tablespoon fresh thyme, chopped

1 teaspoon paprika

½ teaspoon salt

¼ teaspoon black pepper

Skewers (if using wooden skewers, soak in water for 30 minutes to prevent burning)

Instructions

Marinate the Shrimp: In a large mixing bowl, combine olive oil, minced garlic, lemon zest, lemon juice, chopped parsley, chopped thyme, paprika, salt, and black pepper. Mix well.

Add Shrimp: Add the shrimp to the bowl, ensuring they are evenly coated with the marinade. Cover and refrigerate for 30 minutes to allow the flavors to meld.

Preheat the Grill: Preheat your grill or grill pan over medium-high heat. (If using a grill, make sure it's oiled to prevent sticking.)

Skewer the Shrimp: Thread the marinated shrimp onto the skewers. If desired, alternate with slices of lemon or bell peppers for added flavor and color.

Grill the Shrimp: Place the skewers on the grill and cook for 2-3 minutes on each side until the shrimp are pink and opaque. Be careful not to overcook them.

Serve: Remove from the grill and transfer to a serving platter. You can drizzle with extra lemon juice and garnish with fresh herbs if desired.
