Lemon-Lime Cherry Pistachio Cheesecake

Crust:

1 ½ cups pistachios, shelled

1 cup graham cracker crumbs

¼ cup melted butter

2 tablespoons sugar

Filling:

16 oz cream cheese, softened

1 cup granulated sugar

3 large eggs

1 teaspoon vanilla extract

Zest of 1 lemon

Zest of 1 lime

½ cup fresh lemon juice

½ cup fresh lime juice

1 cup sour cream

1 cup cherries, pitted and halved

Topping:

½ cup whipped cream

Additional cherries and crushed pistachios for garnish

Preheat Oven: Begin by preheating your oven to 350°F (175°C).

    Prepare Crust: In a food processor, pulse the shelled pistachios until finely ground, then add the graham cracker crumbs, melted butter, and sugar. Pulse until the mixture resembles wet sand. Press this mixture into the bottom of a 9-inch springform pan, making sure it’s even. Bake for 10 minutes; remove from oven and let cool.

      Make Cheesecake Filling: In a large mixing bowl, use an electric mixer to beat the softened cream cheese and granulated sugar together until smooth and creamy.

        Add Eggs: Gradually add the eggs, one at a time, mixing well after each addition. Then add the vanilla extract, lemon zest, lime zest, lemon juice, lime juice, and sour cream. Mix until everything is just combined and smooth. Be careful not to over-mix.

          Incorporate Cherries: Gently fold the halved cherries into the cheesecake filling using a spatula.

            Pour Filling Into Crust: Pour the cheesecake filling into the cooled crust, spreading it evenly.

              Bake the Cheesecake: Bake in the preheated oven for 50-60 minutes, or until the center is set and a slight jiggle remains. The top can slightly brown, which is okay.

                Cool and Chill: Once done, turn off the oven and crack the door, letting the cheesecake cool inside for about an hour. After that, transfer it to the refrigerator to chill for at least 4 hours, preferably overnight.

                  Prepare Topping: Just before serving, spread whipped cream over the top of the cheesecake. Garnish with additional cherries and crushed pistachios for a colorful presentation.
