Ingredients
  

1 cup cooked jasmine rice

4 cups vegetable broth

1 medium onion, finely chopped

2 cloves garlic, minced

1 medium carrot, diced

1 celery stalk, diced

1 large lemon (zest and juice)

¼ cup fresh parsley, chopped

1 teaspoon dried thyme

1 teaspoon olive oil

Salt and pepper to taste

A pinch of red pepper flakes (optional)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery. Sauté for about 5 minutes until the vegetables soften and the onion is translucent.

    Add the minced garlic to the pot and cook for an additional minute until fragrant.

      Pour in the vegetable broth and bring the mixture to a boil.

        Once boiling, reduce the heat to low and stir in the cooked rice, dried thyme, and red pepper flakes if using. Simmer for about 10 minutes, allowing the flavors to meld.

          Add the zest and juice of the lemon to the soup, stirring well. Adjust the seasoning with salt and pepper to taste.

            Just before serving, stir in the chopped parsley for an extra burst of freshness.
