4 medium russet potatoes, sliced into 1/4 inch rounds

1 cup shredded sharp cheddar cheese

1/2 cup cooked and crumbled bacon

1/2 cup sour cream

2 tablespoons ranch seasoning mix

2 green onions, chopped

2 tablespoons olive oil

Salt and pepper to taste

Optional: 1/4 cup diced jalapeños for extra heat

Preheat your oven to 425°F (220°C).

    In a large bowl, toss the potato slices with olive oil, salt, and pepper until well coated.

      Arrange the potato slices in a single layer on a baking sheet lined with parchment paper.

        Bake in the preheated oven for 30-35 minutes, flipping halfway through until they are golden and crispy.

          Remove the potato slices from the oven and sprinkle evenly with shredded cheddar cheese and crumbled bacon.

            Return to the oven for an additional 5-7 minutes, or until the cheese is melted and bubbly.

              In a small bowl, mix the sour cream and ranch seasoning until well combined.

                Once the potatoes are out of the oven, drizzle the ranch sour cream over each slice.

                  Garnish with chopped green onions and, if desired, jalapeños for a spicy kick.
