Ingredients

2 lobster tails

4 tablespoons unsalted butter

4 cloves garlic, minced

1 tablespoon fresh parsley, chopped

1 tablespoon fresh basil, chopped

1 teaspoon lemon zest

1 tablespoon lemon juice

Salt and pepper to taste

Lemon wedges for serving

Instructions

Preheat the Grill: Preheat your grill to medium-high heat (around 375°F to 400°F).

Prepare the Lobster Tails: Using kitchen scissors, cut the top shell of each lobster tail down the center to expose the meat. Gently pull the meat up and out, leaving it attached at the base.

Create the Garlic Herb Butter: In a small saucepan, melt the butter over low heat. Add the minced garlic and sauté for about 1-2 minutes, until fragrant but not browned. Remove from heat and stir in parsley, basil, lemon zest, lemon juice, salt, and pepper.

Season the Lobster: Brush both sides of the lobster tails generously with a portion of the garlic herb butter mixture. Reserve some for basting and serving.

Grill the Lobster: Place the lobster tails shell-side down on the grill. Grill for about 5-7 minutes until the shells turn bright red and the meat is opaque. Baste the meat with the remaining garlic herb butter halfway through grilling.

Check for Doneness: The lobster is ready when its internal temperature reaches 140°F. It should be firm and opaque in color.

Serve: Carefully remove the lobster tails from the grill. Serve immediately with additional garlic herb butter drizzled on top and lemon wedges on the side for squeezing.
