1 lb ground beef

1 lb ground turkey

1 cup breadcrumbs

1 small onion, finely chopped

2 cloves garlic, minced

1 medium carrot, grated

1/2 cup chopped spinach (fresh or frozen)

1/2 cup grated parmesan cheese

2 large eggs

1/4 cup Worcestershire sauce

1 tablespoon Dijon mustard

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup ketchup (for topping)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large mixing bowl, combine the ground beef and ground turkey, gently mixing them with your hands.

      Add the breadcrumbs, chopped onion, minced garlic, grated carrot, chopped spinach, grated parmesan cheese, and spices (thyme, smoked paprika, salt, and pepper) to the meat mixture.

        In a separate bowl, whisk together the eggs, Worcestershire sauce, and Dijon mustard until well combined.

          Pour the egg mixture into the meat mixture and use your hands to blend all ingredients together until fully incorporated. Be careful not to over-mix.

            Transfer the meat mixture to a loaf pan, shaping it evenly.

              Spread a generous layer of ketchup over the top of the meatloaf for added flavor and moisture.

                Bake in the preheated oven for 50-60 minutes, or until the internal temperature reaches 160°F (70°C).

                  Once cooked, remove from the oven and let it rest for about 10 minutes before slicing.
