Ingredients

1 cup of fresh mango, diced

1 cup of dragon fruit (pitaya), diced (preferably pink variety for color)

1 cup freshly squeezed lemon juice (about 4-5 lemons)

3 cups water (divided)

1/2 cup sugar (or honey)

Ice cubes

Lemon slices and fresh mint for garnish

Instructions

Make Dragon Fruit Puree: In a blender, combine the diced dragon fruit with 1 cup of water. Blend until smooth. Strain the mixture through a fine mesh sieve to separate the puree from the pulp, pressing gently with a spatula to extract as much juice as possible. Set aside.

Prepare Mango Puree: In the same blender, add the diced mango and another cup of water. Blend until smooth. Similarly, strain this mango puree through a fine mesh sieve to remove the pulp.

Prepare Lemonade Base: In a large pitcher, combine the freshly squeezed lemon juice and sugar. Stir well until the sugar is completely dissolved.

Combine Ingredients: Add the dragon fruit puree, mango puree, and the remaining cup of water to the lemonade base. Stir vigorously until all the mixtures are well combined. If desired, adjust sweetness with more sugar or honey according to your taste.

Chill and Serve: Refrigerate the lemonade for at least 30 minutes to chill. When ready to serve, pour the mango dragon fruit lemonade into glasses filled with ice cubes.

Garnish: Garnish each glass with a lemon slice on the rim and a sprig of fresh mint for added aroma and presentation.
