4 slices of sourdough bread

1 cup fresh spinach, chopped

1/2 cup feta cheese, crumbled

1/2 cup mozzarella cheese, shredded

1/4 cup sun-dried tomatoes, chopped

2 tablespoons Kalamata olives, pitted and sliced

1 tablespoon olive oil

1 teaspoon garlic powder

Salt and pepper to taste

Butter for grilling

Instructions
 

In a medium bowl, mix the chopped spinach, feta cheese, mozzarella cheese, sun-dried tomatoes, Kalamata olives, garlic powder, salt, and pepper until well combined.

    Take two slices of sourdough bread and spread a thin layer of butter on one side of each slice.

      On the unbuttered side of one slice, generously spread the spinach mixture. Top with another slice of bread, ensuring the buttered side is facing out.

        Heat a skillet over medium heat and place the sandwich in the skillet. Cook for 3-4 minutes until golden brown.

          Carefully flip the sandwich and cook for another 3-4 minutes on the other side until both sides are crispy and the cheese is melted.

            If you’re making multiple sandwiches, repeat the process for the remaining ingredients.

              Remove the sandwich from the skillet and let it cool for a minute before slicing in half.
