4 white fish fillets (such as cod or tilapia)

2 large tomatoes, diced

1 red bell pepper, thinly sliced

1 small red onion, thinly sliced

4 cloves garlic, minced

1 lemon, zested and juiced

1 teaspoon dried oregano

1 teaspoon smoked paprika

1/4 cup kalamata olives, pitted and chopped

1/4 cup fresh parsley, chopped

3 tablespoons olive oil

Salt and pepper, to taste

Fresh lemon slices, for garnish

Preheat your oven to 400°F (200°C).

    In a large mixing bowl, combine the diced tomatoes, sliced red bell pepper, sliced red onion, and minced garlic.

      Add the dried oregano, smoked paprika, lemon zest, lemon juice, chopped kalamata olives, olive oil, and some salt and pepper to the bowl. Toss all the vegetables together until well combined.

        On a large baking sheet or in a baking dish, arrange the fish fillets in a single layer. Season each fillet with salt and pepper on both sides.

          Spoon the vegetable mixture evenly over the fish fillets, ensuring each piece is well covered.

            Bake in the preheated oven for 20-25 minutes or until the fish flakes easily with a fork and is cooked through.
