Mexican Street Corn White Chicken Chili

2 cups cooked chicken, shredded

2 cups corn (fresh, canned, or frozen)

1 onion, diced

3 cloves garlic, minced

1 can (15 oz) white beans, drained and rinsed

4 cups chicken broth

1 cup cream (heavy or half-and-half)

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon chili powder

½ teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

2 tablespoons olive oil

¼ cup fresh cilantro, chopped (for garnish)

1 lime, cut into wedges (for serving)

Cotija cheese, crumbled (for topping)

Instructions
 

In a large pot or Dutch oven, heat olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes.

    Stir in the minced garlic and cook for an additional minute until fragrant.

      Add the shredded chicken, corn, white beans, ground cumin, smoked paprika, chili powder, cayenne pepper, salt, and pepper to the pot. Stir to combine.

        Pour in the chicken broth and bring the mixture to a boil. Lower the heat and let it simmer for 15 minutes, allowing the flavors to meld together.

          After simmering, stir in the cream, and let it heat through for another 5 minutes. Adjust seasoning with salt and pepper, if necessary.

            Serve the chili hot, garnished with fresh cilantro, crumbled Cotija cheese, and lime wedges on the side for squeezing over the chili.
