12 small baby potatoes

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 cup shredded cheddar cheese

1/2 cup sour cream

1/2 cup cooked and crumbled bacon (or plant-based bacon)

1/4 cup green onions, sliced

1/4 cup chopped fresh parsley

Instructions
 

Preheat your oven to 400°F (200°C).

    Wash the baby potatoes thoroughly and pat them dry.

      In a bowl, toss the potatoes with olive oil, garlic powder, onion powder, salt, and pepper until they are well coated.

        Place the potatoes on a baking sheet lined with parchment paper. Bake for about 30-35 minutes, or until they are tender and the skins are crispy.

          Once baked, remove the potatoes from the oven. Allow them to cool slightly and then cut a slit across the top of each potato, being careful not to cut all the way through.

            Gently squeeze each potato from the ends to open it up.

              Stuff each potato with a generous amount of shredded cheddar cheese, allowing it to melt slightly from the heat of the potato.

                Top the loaded potatoes with a dollop of sour cream, crumbled bacon, sliced green onions, and chopped parsley.

                  Optionally, sprinkle a bit more cheese on top and return to the oven for an additional 5 minutes to enhance the melty texture.
